Introduction

A healthy adaptation of Mississippi roast, but with pork instead of chuck roast. A healthy adaptation of Mississippi roast, but with pork instead of chuck roast.

Ingredients

    40 oz (2.5 lbs) Trader Joe's Boneless Pork Loin Roast
    1/2 cup Potbelly peppers, or 1/2 to 1 cup pepperocinis with liquid
    1/2 cup banana pepper rings with liquid
    1/2 cup 2% milk
    1 tbsp olive oil

    Seasoning:
    1 tbsp parsley
    1 tbsp chives
    2 tsp garlic powder
    2 tsp onion powder
    1 tsp dill
    1 tsp turmeric
    2 tsp salt
    1 tbsp dried onions (optional)

Directions

1. Set slow cooker to 6 hours on high.

2. Drizzle olive oil in slow cooker pot.

3. Mix all seasonings with milk, set aside.

4. Place 2.5 lb pork roast in pot. Deeply score top of roast with knife in a large checkerboard pattern.

5. Stuff scored openings in roast with both kinds of peppers, additional peppers can surround roast in pot.

6. Pour milk-seasoning mixture over and around pork roast.

7. cook until tender - shred in pot while cooking around the 5 hour mark.

Additional peppers can be added to taste. Serve over a salad, vegetables, rice, whatever!
