Number of Servings: 2

Ingredients

2 cans Tuna (7oz canned in water)
3 tbsp homemade mayo or avocado mayo
    3 medium Portabella Mushroom caps
3 tsp Grey Poupon Dijon Mustard
    Spices to taste

Tips

Cheese adds to the calorie count of this dish, so try to avoid it if you can. This is filling, and delicious! You can also cook the cap, then stuff it with cold tuna salad for a summer friendly lunch.

Directions

Clean and de-stem the mushroom caps, and place them on a baking sheet (make sure it has a lip - they do let off water as they cook).

Mix up the tuna, mayo, mustard, and spices, then stuff it into the caps. Bake at 350F for about 20 minutes, or until the mushrooms are softening and the tuna salad is warm through.

Serve as is, or with a topping of cheese!
