Ingredients

    1 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    1 medium Carrots, raw
    0.25 cup, chopped Peppers, sweet, red, fresh
    0.33 cup Sweet potato, cooked, baked in skin, without salt
    0.25 cup, mashed Pumpkin, cooked, boiled, drained, without salt
    0.25 cup, sliced Zucchini
    0.25 medium (2-1/2" dia) Onions, raw
    1 serving Canola Oil Non-stick Spray (2-3 second spray)
    Garlic, Salt, herbs to taste20 gram(s) Mushroom, Raw, Fresh

Tips

Serve with meat, fish or alone.


Directions

par boil potato, sweet potato, pumpkin and carrot. Remove and drain. Fry onion, mushroom, peppers, zucchini in oil with garlic and herbs. Add remaining veg and bake/fry until brown. Cover for 5 - 10 mins, unti veg all cooked. Season to taste.
