Introduction

This is a low fat and low calorie bake. You can sub for 1% milk and use a different cheese or meat to reduce calories. This is just over 400 calories for the 3 servings it makes. Which is acceptable to eat as one person if you like a hearty breakfast that gets you going.

Ingredients

    1 serving Baby Plum Tomatoes (6 tomatoes) (by CATMAN124)
    1 serving Jimmy Dean Hearty Turkey Sausage Crumbles (1/2 c)
    2 large Egg, fresh, whole, raw
    1 serving "Great Value" Cheese, Fiesta Blend (1/3 cup)
    1 cup, chopped Scallions, raw
    0.25 cup Milk, 2%, with added nonfat milk solids, without added vit A

Directions

1. Fry turkey sausage and chopped scallions in a pan sprayed with 0 calorie olive oil pam spray.
2. While cooking, cut baby plum tomatoes in 1/2 pieces.
3. When the turkey is browned, and the scallions looked cooked, add baby plum tomatoes to sausage mix.
4. Fry until browned and soft
5. Spray a cooking pan with 0 calorie olive oil pam spray.
Note: I used a loaf pan, but any pan will do, as long as sausage mix is evenly spread across the pan so you can make 3 fairly equal servings. Smaller pans are recommended so the egg mix covers the entire pan.
6. Spread the sausage mix evenly across the bottom of the pan.
7. Use a bowl to mix two eggs with 0.25 cup of milk, beat with fork to scramble.
8. Gently and evenly pour the egg over the sausage mix in the pan.
9. Bake on 400 until browned on top, and egg looks done (about 10-15 minutes).
10. Sprinkle cheese on top and bake another 2-5 minutes until cheese is melted.
11. Take out pan and let sit 5 minutes.
12. Ready to serve and enjoy.
