Ingredients

* 1 1/2 cup Steel Cut Oats
* 1 can pumpkin, 15 oz
* 4. 1/2 cup Milk
* 1 tbsp Cinnamon
* 1 tsp Nutmeg
* 1/4 cup maple syrup or honey
* 2 tsp Vanilla
Tips
Make ahead breakfast for the whole week. Substitue pumpkin pie spice for cinnamon/nutmeg. This makes really thick, almost a solid clump of oatmeal. I do this to freeze batches in muffin tins and thin with milk when ready to eat. To make ready to eat oatmeal, reduce the oats to 1 cup.
Directions
Mix ingredients in crockpot prepared with coconut oil. Cook on low for 6-8 hours. Stir occasionally if possible, otherwise the edges may cook more than the center. If this happens just stir them into the rest at the end.
