Ingredients

21 lowfat graham crackers (about a box)
2 cups unsweetened applesauce, divided
2 small boxes sugar free Jello, different flavors - whatever you like.
about 1/3 tub of Cool Whip Free
Directions
Divide the applesauce in half. Place each cup in a bowl. In one bowl, mix one flavor of the sugar free Jello. Do the same thing in the other bowl with the other flavor.
Lay three graham crackers side by side on a plate. Evenly spread 1/3 of one flavor of applesauce/jello mixture over graham crackers. Place three more graham crackers over applesauce mixture. Spread 1/3 of second flavor on top of graham crackers. Repeat layers, alternating flavors, until applesauce mixture is used up. Place three graham crackers on top. Spread about a third tub of cool whip free over the entire thing.
Let set for about three or four hours in the fridge. The applesauce will seep into the graham crackers, softening them and turning them spongy like cake. Sounds gross, but tastes like heaven.
