this one made with whole wheat couscous this one made with whole wheat couscous
Number of Servings: 12

Ingredients

    couscous
    11 tbsp olive oil
    8 tbsp parsley
    3 small/med tomatoes
    1/2 red onion
    1/2 yellow onion
    salt & pepper to taste
    3/4 cup lemon juice

Directions

add 2 1/2 cups dry couscous to 1 cup boiling water. add olive oil and lemon juice and mix together. cover and let sit for 5 min. add tomato, parsley, onions and salt and pepper to taste. cover & let sit in fridge for 1 hour before serving.
*add 2 tbsp chopped mint leaves if you like.
