Introduction

These are great pancakes for anyone. The rice flour adds a little more texture so they are not so eggy. You can substitute the rice flour for any flour or Bisquick. Ingredients

    3 extra small (less than 6" long Banana, fresh 4 large Egg, fresh, whole, raw .20 cup Rice flour, brown .25 tsp Cinnamon, ground 4 large (1-3/8" dia) Strawberries, fresh

Directions

Mash bananas, add eggs and mix well. Add flour and cinnamon. Dice strawberries and add to mixture. Spray pan with nonstick spray. Drop batter to make about a 3in pancake. Cook a few minutes on each side until cooked through. Cooking time will vary.

Serving Size: Makes about 10 3 inch pancakes
