Ingredients

8.40 tsp Splenda No Calorie Sweetener
6 large Egg Yolk
.5 cup Lemon Juice
4 tbsp Smart Balance Light w/Flaxseed Oil
0.06 cup Flour, white
Tips
If the curd becomes lumpy, use an immersion blender to break up the lumps.
This is nice served over angel food cake or on scones.
Directions
Add lemon juice and flour to a small saucepan and whisk until no lumps appear. Add egg yolks and Splenda and stir until completely smooth.
Heat over medium heat until it just starts to thicken whisking constantly. As it gets thicker, reduce heat to low and keep stirring until it turns to a thick curd-like consistency. Remove from heat.
Quickly whisk in Smart Balance, and, if using salt, lemon and vanilla extract. Decant into a half-cup container and allow to cool to room temperature. Cover and place in refrigerator. Use within a week.
Serving Size: 7-8 one-tablespoon servings
