Ingredients

    2 cup Near East (Roasted Garlic & Olive Oil Pearled Couscous) (by FOXMOON)
    1 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
    .25 cup, sliced Onions, raw
    2 cup, sliced Zucchini
    6 spear, medium (5-1/4" to 7" lo Asparagus, fresh
    1 medium Mushrooms, fresh
    2 cup Spinach, fresh
    2 tbsp Extra Virgin Olive Oil

Tips

You can really use any veggies you like or have on hand or maybe try shrimp in place of chicken


Directions

Make couscous according to instructions before taking off heat toss in spinach and stir put on lid and take off heat.
Slice all veggies and saute in 1 T olive oil set aside.
Pound out chicken breast cut in half season and brown in pan on both sides.
In bowl layer couscous put veggies on side then slice chicken and lay on top.
