Ingredients

    2 cups brown rice
    1 cup black beans - drained
    1 cup whole kernel corn - drained
    1 cup salsa- mild to hot to taste
    2 jumbo black olives sliced
    Kraft 2% Mexican blend shredded cheese

Directions

Cook rice as directed. While riceis cooking put all other ingredients except cheese in large ove proof casserole sprayed with PAM. Add cooked rice and sprinkle cheese on top. cover and bake in 300 degree oven for about 30 minutes.
Serve as a side dish or add cut up chicken breast or beef strips to make into main meal.

    I made this tonight and it was great! I really hate anything with beans in it because it is usually so dry, but this turned out great! I used everything it states except I used a whole jar of salsa & doubled the black beans ( I didn't have any corn). Both me and my boyfriend are definite fans! - 1/9/11
