Introduction

A handy breakfast. A handy breakfast.
Number of Servings: 6

Ingredients

    6 eggs
    4 oz sharp cheddar cheese
    10 oz box McKenzie's Chopped Spinach
    1 tsp onion powder
    1 tsp pepper
    1/2 tsp salt

Directions

Beat eggs
Add DRAINED spinach
Add shredded cheese (4 oz is about a cup in size)
Add onion powder, salt and pepper if you wish.

Pour into foil muffin cups (lightly spray with Pam)

Bake 375 for 30 minutes. MMM

Makes 6 muffins

    I used 10 eggs instead of six....and also added one chopped onion and some minced garlic. I seasoned with Mrs. Dash and next time I may add some turkey bacon or bacon bits. I couldn't find my muffin tin, so just baked it in a 9x13 pan and cut in squares. Husband really liked it too! - 11/1/08
