Ingredients

    1 15 oz can Pumpkin
    1/2 cup Canned Coconut Milk (not "lite")
    1 cup Broth, either chicken or vegetable (approximately)
    2 tsp Curry powder
    1 tsp Vegetable Broth Seasoning ( I like Seitenbacher's)
    1 tsp Lemon Juice 'Real Lemon' 100% juice

Tips

BLE portions::
1 cup = 5 oz. vegetable serving and about 2/3 fat serving
1-1/4 cup = 6-1/4 oz. vegetable serving, 5/6 fat serving
1-1/2 cup = 7-1/2 oz. vegetable serving, 1 fat serving.


Directions

In a large glass measuring cup (quart size), put the pumpkin and coconut milk. Stir in enough broth so that the total volume of pumpkin, coconut milk, and broth equals 3 cups. Stir in the remaining ingredients. Then either heat in the microwave or pour into a saucepan and heat on the stove to simmering, or serving temperature.

Serving Size: Each serving is about 1-1/2 cups
