Number of Servings: 8

Ingredients

    4 Boneless Skinless Chicken Breasts
    1 Cup fat free ham, about 4 slices, diced
    1 Cup Monterey jack cheese, grated
    2 tomatoes
    1 small onion
    1 pat of butter
    1 Tbsp "Italian Seasoning"
    Salt & Pepper to taste

Directions

Preheat oven to 375
Place chicken in lightly greased baking pan
Cover chicken with ham
Cover chicken and ham with cheese
Cover with foil or lid.
Bake for appox 45 minutes or until chicken is tender removing foil after 30 minutes.
Sautee diced onion in small frying pan with remainder of the butter. Add diced tomoato and sautee until just warm.
Remove Chicken from oven and top with tomato

Tomato and onion can be baked on chicken (under or mixed in with the cheese) but my kids don't like it, so we keep it seperate.

Traditional Saltimbocca uses prosuciutto and swiss cheese with fresh basil, lots of butter and white wine. This is a great way to change up that healthy chicken breast without such a strong flavor.

    I baked the tomatoes and onions on the chicken. I loved it,but my kids were unimpressed. I'll be making it again, regardless; thanks for sharing! - 9/4/17
