Introduction

This is a slightly sweet marinade good for grilling or pan frying. It is a single serving because it's easier to double a recipe than to cut it in 1/2 GRIN You can use the same marinade for chicken or fish. Ingredients

    ¼ cup Pineapple chunks
    1 Tbsp Vinegar
    1 tsp. Cumin Powder
    1 clove Garlic
    2 Tbsp. Chopped onion
    Salt and Pepper to taste
    2 tbsp. Olive Oil
    4 oz Pork Shoulder

Directions

Combine first 6 ingredients to create a marinade.
Cut pork into 2x2” sized pieces, then add to marinade.
Allow to marinade 3-4 hours in refrigerator.
Two choices for cooking
1. Skewer meat and pineapple and grill and put marinade in sauce pan bring to a boil add thickener for dipping sauce.
2. Brown meat in skillet, add marinade bring to a boil and simmer
20 minutes, add thickener and serve.

Double the recipe for two servings.

Serve over rice with your favorite vegitable.
