Ingredients

2 slices Sprouted Barley Bread - Trader Joe's
1 whole larg egg
2 large egg whites
1 Tbsp skim milk
1/2 tsp vanilla extract
1 packet Splenda
1/4 tsp ground cinnamon
1/4 tsp ground cloves
Sprinkle of Butter Buds
Toppings: (not included in calorie count) Either: 1/4 cup to 1/8 cup Smucker's sugar-free syrup or 1 to 2 tbsp Smucker's low sugar jam.
Directions
1. Heat skillet between low and medium
2. In a small container put 1 whole large egg, 2 large egg whites (separate yolk from egg white), milk, vanilla, Splenda, cinnamon and cloves and beat until mixed.
3. Pour mixture into a square container that would fit a piece of bread. (I use a Glad sandwich container).
4. Take one piece of bread and put in mixture. Soak for about 30 seconds, flip and soak for another 30 seconds.
5. Spray pan with non-stick spray and put piece of soaked bread in pan covered for 2 minutes, flip and cook another 2 minutes covered. Put on plate.
6. While the one piece of bread is cooking, dunk the second piece of bread into mixture. I let this one soak up the rest, flipping every few seconds. (Whatever is left over you can scramble in the end).
7. Cook second piece of bread for 3 minutes on one side (because it will have more egg in it) and two minutes on the other side covered. Put on plate.
8. Sprinkle with small amount of butter buds instead of butter.
9. Top with syrup or jam. Enjoy.
