Introduction

Refreshing and a nice alternative to a side salad. Refreshing and a nice alternative to a side salad.
Number of Servings: 6

Ingredients

    1 large English cucumber sliced thin (~6 cups)
    1 small sweet onion cut in half then cut into thin slices.
    1/4 cup cider or white vinegar
    1/3 cup granulated sugar
    1 tsp. salt
    1 tsp. dried dill weed or 1T fresh dill weed

Directions

Slice cucumber with a mandoline or using a blade on a food processor - you want ultra thin slices. Put into large bowl.

Slice onion into ultra thin slices. Separate rings and toss into bowl with cucumbers.

Mix together vinegar, sugar, salt, and dill. Pour over cucumbers/onions and stir well. Let marinate for at least two hours.

Makes 6 one cup servings.
