Introduction

Ingredients

    1 can (15.5 ounces) Cannellini beans, rinsed and drained
    6 cups fresh baby spinach leaves
    2 teaspoons extra virgin olive oil (optional)
    salt and pepper to taste

Tips

This is a great and easy side dish to serve with any type of grilled, roasted, or pan-fried protein.


Directions

Heat a 10 inch nonstick skillet over medium heat. Add the drained and rinsed beans and heat through. Add the spinach and toss to combine. Add the olive oil (if needed and amount to taste) and toss until spinach is softened but remains dark green. Add salt and pepper to taste.

Serving Size: Makes 4 servings of 3/4 cup each
