Ingredients

    1/2 cup - Brown Rice
    50 g - Cucumber, diced
    50 g - Tomato, diced
    4.5 oz - grilled chicken breast, diced
    1/4 cup - bean sprouts, diced
    75g - mushrooms, cooked
    3 tbsp - sweet onion dressing

Directions

Dice up cucumber, tomato, chicken & bean sprouts.
Fry up mushroom (with a little pam).
Mix together all ingredients above, with rice.
Add dressing, mix well.
Refrigerate overnight.

Makes 1 serving for lunch.

**Variation, substitute rice for a whole wheat wrap, put all ingredients in wrap after mixed.**
