Introduction

Ingredients

2 Red Bell Peppers
8oz. Package of Light Sour Cream
1/4 of a Small Onion
1 tbsp Olive Oil
3 Basil Leaves
1/2 Lemon (juiced)
Directions
1. Cut the peppers in quarters and remove all seeds and stems. Place the quarters on a baking sheet and broil them until completely browned on top. All them to cool slightly (enough for them to be handled) and peel off the browned skin.
2. Heat the oil in a frying pan and add the 1/2 onion (no need to chop, just seperate the rings). Cook until browned.
3. Add the flesh of the peppers, onions, basil, lemon juice, and sour cream into a chopper, blending as you add each.
4. Return mixture to pan and allow it to heat up.
Then add to your favorite food.
Note: You can play with the recipe as you like and add some hot pepper, tomatos, articoke hearts, etc to change the taste slightly for different variations.
Makes about 5 Cups.
