Introduction

Hearty soup is filling and tastes like a stuffed bell pepper. If you prefer spicy, use rotel instead of diced tomatoes. The cheese sprinkled on top is optional, of course. Some people add sugar, but I didn't want the extra calories. If you're doing a keto diet, add cooked cauliflower rice during the simmer time instead of rice. Ingredients

    16 oz 80/20 ground beef chuck
    1 cup, chopped Onions, raw
    1 serving Baby Bell Peppers (3 peppers = serving)
    1.5 cup Hunt's Fire Roasted Diced Tomato
    2 cup (8 fl oz) Chicken Broth
    2 serving Brown rice (1 cup cooked)
    1 tbsp Garlic powder
    1 oz Cheddar or Colby Cheese, Low Fat

Directions

Brown and drain your hamburger. I like to add my chopped pepper and onions about half way through. Add chicken broth, diced tomatoes, spices and rice. Bring to a boil and then down to a simmer. Simmer for 20-30 minutes to let the flavors mingle.

Serving Size: Makes around 10 cup and a half sized servings
