Introduction

Ingredients

    12 oz center cut pork loin, sliced in bite sized pieces
    1.5 tbsp Extra Virgin Olive Oil
    0.5 tbsp Sesame Oil
    1/2 medium Onions, chopped
    1 cup Snow Peas, fresh
    1 small Zucchini, chopped
    3 cloves Garlic, minced
    1 Tbsp Ginger Root, minced
    2 tbsp Gluten Free Soy Sauce
    3oz. Cole Slaw - 3 Color Deli Cole Slaw
    Fresh herbs (finely chopped) to taste (I used basil, rosemary and thyme)
    1 cup Great Value Instant Brown Rice uncooked
    1 cube Chicken bouillon

Directions

Cook rice according to package instructions adding bouillon cube to water. In large skillet or wok over medium high heat, heat 1 Tbsp olive oil. Add pork and cook until no longer pink, stirring frequently. 3-5 minutes. Remove pork from pan. Add remaining olive oil and sesame oil and then add onions, snow peas, zucchini and Cole slaw mix. Stir for 2-3 minutes then add garlic, ginger and fresh herbs. Stir fry until veggies begin to soften, 3-4 minutes. Add in pork and rice and toss to mix well. Remove from heat and add soy sauce. Mix well and serve. Serving Size: 3- 2 cup servings
