Ingredients

1 large Egg, fresh, whole, raw
1 tsp Garlic powder
1 tsp Onion powder
2 tbsp Basil
0.50 cup, chopped or sliced Red Ripe Tomatoes
1 cup HEB marinara pasta sauce
2 serving Farmland 96% fat free Ham Slices (1 slice)
0.25 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g)
6 thigh, bone and skin removed Chicken Thigh
2 tbsp Extra Virgin Olive Oil
2 oz Mozzarella Cheese, whole milk
Tips
can use chicken breasts instead and vary the spices to your family's taste
Directions
Preheat oven to 450. Beat egg in a bowl and put almond meal in another. Dredge chicken thighs through egg wash and then in almond meal to coat well. Over medium high heat, fry chicken in 2 tbsp olive oil about 2 minutes on each side or until lightly browned.
In a large casserole, put fresh tomatoes to cover bottom. Place chicken thighs in and top with ham slices, season with garlic, onion and basil reserving some basil for garnish. Top with marinara sauce, then chunks of mozzarella cheese and sprinkle more basil. Bake for 25-30 minutes or until bubbly and cheese lightly browned.
