Introduction
These beans are great in burritos, as a side dish, or even as a soup! My family gobbled them up. :-) Put this in the crockpot and let it cook all day. No need to presoak the beans! Ingredients

1 pound bag dried pinto beans
1 medium onion, chopped
5 cloves garlic, minced
1 chipotle pepper
1 Tablespoon smoked paprika
2 teaspoons ground cumin
Salt and pepper to taste
10 cup (8 fl oz) Water, tap (add more or less depending on consistency you desire)
Cilantro, chopped (optional)
Tips
Cooking time is on high. Double the time if you cook the beans on low. Enjoy!
Directions
Place pinto beans, onion, garlic, chipotle pepper and spices into crockpot. Add water to crockpot, covering beans by at least 2 inches. More water can be added if you want to make a soup. Cook on high for 6 hours or low for 12 hours. Beans are ready when they are soft. Garnish with chopped cilantro.
