Introduction

Ingredients

    4 cup, chopped Kale
    4 cup, chopped Swiss Chard
    1 cucumber (8-1/4") Cucumber (with peel)
    .5 cup Sauerkraut
    1 fruit without skin and seeds Avocados, California (Haas)
    0.25 cup Pepitas (Pumkin Seed Kernals)
    1 tbsp Olive Oil
    .25 tsp Salt
    2 tbsp Basil
    1 cup cherry tomatoes Red Ripe Tomatoes

Tips

Use fresh refrigerated sauerkraut and it will add probiotics to the salad. Keeps well.


Directions

Chop the greens, basil, cucumber, and cut the cherry tomatoes in half. Stir in the fresh sauerkraut and salt and oil. Toss. Top with pumpkin seeds that have been toasted in a dry skillet until they begin to pop.

Serving Size: makes 8 servings, about a full cup each.
