Ingredients

    1.5 cup Flour - Gold medal all purpose flour
    0.5 cup King Arthur 100% Unbleached White Whole Wheat Flour
    1.0 extra large Egg, fresh, whole, raw
    3.0 oz Great Value - Organic Soy Milk, Vanilla
    5.3 tbsp Crisco Pure Vegetable Oil
    0.75 cup, unpacked Brown Sugar
    2.0 medium (7" to 7-7/8" long) Banana, fresh
    2.0 tsp Baking Powder
    1.0 tsp Baking Soda
    2.0 tsp Cinnamon, ground
    0.6 cup, hulled Sunflower Seeds, without salt
    1.0 tsp Vanilla Extract

Directions

Combine all-purpose and whole wheat flour, baking soda, baking powder, salt, and sunflower seeds in a large bowl. In a medium bowl mash bananas, combine with egg, sugar, oil, vanilla, and soy milk. Pour wet ingredients into dry, mix until just combined. Spoon about 1/3 c batter into greased muffin tins. Bake at 375 F for 15-20 minutes or until edges are brown and have pulled slightly away from the pan, and the centers are set.
