Ingredients

    6 - half pound Boneless Pork Loin Chops
    1 - 10 oz Spinach, frozen
    3 cups - Shredded Mozzarella Cheese, part skim milk
    8 oz Cream Cheese, cut into chunks
    .5 tsp Garlic powder
    0.5 tsp Ranch Powder DIp Mix (not prepared)
    4 serving Pork Rinds

Tips

Cook time, calorie and carb count will be reduced if your chops are smaller.


Directions

Preheat oven to 375F. Prep a baking dish with cooking spray. Split 6 loin chops, 1" thick, until almost cut through. Use food processor, bullet or mallet and ziploc bag to crush pork rinds and set aside.

Cook spinach according to directions, drain. Use mixer to blend cut up cream cheese, 3 cups shredded mozzarella and seasonings with still warm spinach. Spoon even amounts into split chops and fold over, then place each chop into prepared dish.

Sprinkle pork rind crumbs to cover all and bake 45 minutes.
