Introduction
Use this mix to quickly put together an egg-free omelette with toppings of your choice. If you can find it, Indian black salt (Kala Nemak) will lend its faint sulfurous tang for more egg-like flavour. Ingredients

1.5 cup garbanzo & fava flour (Bob's Red Mill) (or can use plain chickpea flour)
3.0 Tbsp Nutritional Yeast
1.5 Tbsp Chia seeds, ground (or 3 Tbsp ground flax seeds)
1.5 tsp Baking Powder
1.0 tsp Cumin, ground
0.5 tsp Turmeric, ground
0.5 tsp Salt (preferably black salt)
0.25 tsp Pepper, black, ground
0.5 tsp Paprika
Directions
Mix all ingredients well.
Store in an air-tight container (blog says in the fridge but I keep mine at room temp)
To make omelette:
Heat frying pan (non-stick or use some oil) over medium heat.
Mix 1/3 cup mix with 1/3 cup water.
Pour mix into pan and spread evenly with spatula, and cook until dry-looking on top, then flip over and cook about 2-4 minutes longer (cooking time will depend on how things or thick it is).
My favourite toppings are onions, peppers and greens, stir fried in the pan until cooked through before mixing the batter into them.
