Ingredients

4 large Egg white, fresh
2 cup Flour, white
8 medium (2-1/4" to 3-1/4" dia.) Potato, raw
.75 cup Milk, 2%, with added nonfat milk solids, without added vit A
2 cup, diced Ham, extra lean, (5% fat)
1 medium (2-1/2" dia) Onions, raw
1 tbsp Salt
4 tbsp. margarine or butter
Directions
Peel and dice your potatoes & onions.
In a large pot, add the potatoes, ham, & onions. Fill with water until it is just covering the potato mixture. Add your salt. Heat to a boil.
While your soup mix is cooking, in a medium bowl, mix your eggs until well blended. Then slowly add the flour until you have a lightly powdered ball. Set aside.
When your potatoes are nearly cooked, add your milk and buttered. Cook to a rolling boil.
Spoon the batter into the soup a little at a time. When they float almost completely on top, then they are done.
