Easy delicious black bean burgers. Beware cooking on a grill as they are a bit fragile. Cook on tin foil if grilling. You can omit the egg for Vegan, but they don't stick together as well. Ingredients

2 15- to 16-ounce cans black beans, rinsed, drained
1/2 cup chopped red onion
1 egg
2 cloves garlic
1/2 cup dry breadcrumbs
4 tablespoons bottled chunky salsa
1/2 cup bottled chunky salsa
1 teaspoon ground cumin
Directions
Using food processor, mash beans and garlic in medium bowl. Hand mix in onion, peppers, breadcrumbs, egg, 4 tablespoons salsa and cumin. Season with salt and pepper. Using moistened hands, shape bean mixture into two 3- to 4-inch-diameter patties.
Prepare grill (medium-high heat) or preheat broiler. Brush tin foil with oil or spray with Pam. Grill burgers on foil until heated through, about 3 minutes per side.
Grill cut sides of buns until lightly toasted, about 1 minute. Transfer burgers to bottom halves of buns. Spoon 1/4 cup salsa over each. Cover with tops of buns.
