Introduction

A great moist and crunchy chicken salad, without all of the mayo! A great moist and crunchy chicken salad, without all of the mayo!
Number of Servings: 4

Ingredients

    4 Stalks of Celery
    2 Large Carrots
    1 Small Onion
    2 Boneless Skinless Chicken Breasts
    1 T dijon
    2-3 T of Miracle Whip Light
    Salt & Pepper to taste

Directions

Using a Cuisinart, or by hand, finely dice the celery, carrot, onion and chicken. Mix together. Add dijon mustard and just enough miracle whip to help everything stick together. Season with salt & pepper. Yields 4 generous servings.
