Introduction
A cookie I dont mind giving my kids! These were delicious and very satisfing. It was a recipe that I altered and it worked. You can cut the chips down to 1 cup, we just love chocolate around here. Nuts are optional. Play around with it. I used chocolate chunks. I also recommend giving some away as gifts if you dont have a big household, because they really are delicious. Ingredients

1/2 c. Soft butter (unsalted)
1/2 c. Unsweet applesauce
1/2 c. Brown splenda
1/2 c. Splenda
2 Lg. Eggs
2 tsp Vanilla extract
1 1/4 c. unbleached organic flour
1/2 tsp. baking soda
1 tsp salt
3 c. oats (quick)
2 c. semi chocolate chips
Directions
preheat oven 325 degrees.
Cream first four ingredients. Add one egg at a time. Then cream in vanilla. Then add the flour, baking soda and salt. Mix well. Add the oats and then fold in the chips.
Spoon onto ungreased baking sheet. bake for 10 minutes or when they START to brown. Let them set on cookie sheet for 5 minutes then set on counter to cool.
Makes 32 good sized cookies.
