Ingredients

    1 1/2 C whole wheat flour
    3 1/2 tsp baking powder
    1/4 tsp nutmeg
    1/4 tsp cinnamon

    1 1/4 c mashed sweet potatos
    2 eggs
    1 1/2 c low fat milk
    1/4 c unsweetened applesauce

Directions

mix all dry ingredients
add wet ingredients
mix well. will be lumpy
scoop onto preheated griddle.
(i made large pancakes and got 11, smaller spoon will yeild more pancakes)

    I added a 1/8 cup of brown sugar also. They were GREATTTTT. My family continued to brag on the smooth taste and texture, and asked me for the recipe. Will most definitely make them again for a evening snack. - 6/20/11

    Incredible!
    These were absolutely delicious...a lot of prep work if you don't have a vegetable shredder...mine ended up more like hashbrowns. But they were definately tasty. Excellent recipe! - 9/28/10
