A lower calorie version of my favorite soup A lower calorie version of my favorite soup
Number of Servings: 4

Ingredients

    2 tbs butter, unsalted
    2 cups onions, thinly sliced and separated
    32 ozs beef broth (I use Pacific Foods Organic Beef Broth)
    1 tsp Worcestershire sauce (I use Lea & Perrins)
    1 oz dry sherry (I use Holland House)
    1 oz red wine (I use Holland House)
    1 dash pepper
    20 croutons (28 grams) - I like Fresh Gourmet Organic Seasoned Croutons
    4 slices Swiss cheese (19 grams each)

Directions

In a saucepan, melt butter over low heat and add the onions; stir to coat. Cook over medium-low until the onions are tender and translucent. Slowly add broth, Worcestershire sauce, sherry, wine and pepper. Simmer 15 mins.

Ladle soup into broiler safe serving bowls. Divide croutons evenly and a top each bowl with a slice of cheese. Place under broiler until cheese is bubbly. Allow to cool slightly before serving.
