Introduction

Agar agar layers in both plain malt and dark chocolate make these glasses a fun-to-look-at, cooling treat. If you cannot find agar, substitute an equal amount of (unflavoured) gelatine. Ingredients

    ---Chocolate Layer---
    1 tbsp agar agar powder
    2 cups water
    1/4 cup unsweetened cocoa powder
    1/3 cup sugar
    1/4 tsp salt
    1 cup skim milk
    ---Malt Layer---
    1 tbsp agar agar powder
    1 1/2 cups water
    3/4 cup plain malt Horlicks mix
    1/3 cup sugar
    1 cup *evaporated* skim milk (not sweetened condensed)
    1/4 tsp vanilla

Directions

---Chocolate Layer---
Combine agar, water and cocoa in a saucepan, blending well.
Bring to a simmer and cook, whisking, 5 minutes.
Remove from heat, stir in sugar, salt and milk.
Pour evenly into 6 glasses or cups and let stand (in refrigerator) 2 hours.
---Malt Layer---
Combine agar, water and Ovaltine in a saucepan, blending well.
Bring to a simmer and cook, whisking, 5 minutes.
Remove from heat, stir in sugar, milk and vanilla.
Carefully ladle over the chocolate jelly in the glasses.
Refrigerate until firm.
