Ingredients

    .75 cup, chopped Cranberries
    2 cup (1 serving) Kellogg's Complete Wheat Bran Flakes Cereal
    1.25 cup Fair Life Fat Free Milk
    1.33 cup Flour - Gold medal all purpose flour
    24 tsp Splenda Naturals made with Stevia (by MRS-MCCLURE)
    12 tsp Dark Brown Sugar, Pure Cane Sugar
    3 tbsp Olive Oil
    3 tsp Baking Powder
    1 tsp Orange Peel
    1 tsp Vanilla Extract
    2 large Egg white, fresh
    .25 cup, chopped Pecans
    2 tbsp *Flax Seed Meal (ground flax)
    0.5 tsp Morton Iodized Salt

Tips

This makes 11 muffins. Put water in the empty cup to keep it from burning.
You can also make these with blueberries or other fruit . Adding lemon peel to blueberries or cinnamon to chopped apple would also be good; I suggest to delete the orange peel in that case to avoid competing flavors.


Directions

Soak bran flakes in milk for 2+ minutes. Beat egg whites.
Preheat oven to 400. Spray cupcake liners with nonstick spray. Combine dry ingredients (pecans, flax, flour, splenda naturals (1/2 c), brown sugar (1/4 c), salt, baking powder, orange peel) and stir.

Combine bran flakes with egg whites, vanilla and oil. Stir in flour mixture and cranberries.
