Ingredients

    6.0 large Egg, fresh, whole, raw
    1.0 tbsp Garlic powder
    1.0 tsp Onion powder
    1.0 tbsp Oregano, ground
    1.0 tbsp Pepper, black
    1.0 tsp Salt
    2.0 large (3" to 4-1/4" dia.) Potato, raw
    1.0 cup Colby and Monterey Jack Cheese shredded
    2.0 tbsp Extra Virgin Olive Oil
    16.0 oz Ground Pork Sausage, Lean cooked, drained

Directions

Wash and cut potatoes into 1/4 to 1/2in. cubes, place into mixing bowl. Add 1 tbsp of olive oil, and all seasonings to potaotes and mix thoroughly. Heat medium to large skillet to medium heat, add the remaining olive oil to pan and cook potatoes, so that they are just about to fall apart. While potatoes are cooking, brown the pork sausage in a different skillet and drain. Add sausage to potatoes and mix well. In a bowl, scrambled 6 eggs and add to potates and sausage. Mix thoroughly to ensure eggs are cooked. Once mixture is cooked, add 1 cup cheese to top, cover pan to melt. Serve. Serving Size: 1 cup
