Ingredients

1 cup (248 grams) apple juice or cider
0.5 tsp salt
0.5 tsp black pepper
2 medium (334 grams total) Granny Smith apples
3 cups (615 grams total) butternut squash cubes
2T packed brown sugar
0.25 tsp cinnamon
0.25 tsp dried thyme
0.25 tsp dried sage
Directions
Peel and slice the apples.
Peel and cube the squash.
Heat cider in skillet. Sear pork loin (1.5 lbs) on all sides in cider.
Sprinkle meat on all sides with salt and pepper.
Place meat in slow cooker and pour juice over it.
Combine apples with squash.
Sprinkle mixture with sugar and herbs.
Stir mixture and pour over pork loin.
Cover.
Cook on low 5-6 hours.
Remove pork from cooker. Let stand 10-15 minutes, then slice.
Serve slices topped with apple and squash mixture.
Serving Size: makes 5 240-gram scoops
