Ingredients

    8 whole wheat tortillas, small size
    8 ounces cooked medium shrimp
    1 medium onion, sliced
    1 medium red pepper, sliced thinly
    1 medium yellow pepper, sliced thinly
    6 ounces grated light cheddar cheese
    pinch cayenne
    1 tsp oregano
    1 tsp ground cumin
    1/2 tbsp olive oil

Directions

In a small, non-stick pan, heat the olive oil. Saute the onions, peppers and spices slowly, do not brown. At the end of the cooking period, add the shrimp just long enough to heat. Set aside. Sprinkle each tortilla thinly with cheese. Divide the filling evenly, placing it on half of each tortilla. Top with cilantro. Fold the tortillas, pressing down firmly. Heat a cast iron (for best browning) skillet over medium high heat. Do not grease. Heat and brown the quesedillas, two at a time, until nicely browned. Cut each in half to serve. Makes 4 dinner size or eight appetizer servings.
