Ingredients

600gms Kumara, fresh & also cooked (red,gold or orange)
1 tsp Olive Oil
1/2 cup Parmesan Cheese, grated
1/2 tsp Paprika
1/2 tsp Cumin seed
1 tsp Ground Black Pepper
1 dash Salt (optional)
Tips
Great with summer salad; at a BBQ; or even for brunch.
Directions
Preheat oven to 220ºC (430ºF) bake and line an oven tray with baking paper. Scrub kumara clean and pat dry. Rub oil over kumara and season with salt and pepper. Place on prepared tray; bake for 25 minutes.
Place cooked kumara in a large bowl and roughly mash.
Stir in two thirds of the parmesan, paprika and cumin. Season to taste with salt and pepper.
Use your hands (let the mixture cool a little if needed) to shape into 8 patties.
Place patties on oven tray and sprinkle with remaining parmesan. Bake for 15 minutes, until browned around edges.
Let sit out of oven for a couple of minutes.
Serve with dollop of sour cream or greek yogurt (unsweetened).
Serving Size: makes 4 larger or 8 smaller cakes/patties
