Ingredients

    1 c. canned pumpkin
    1 c. sugar
    1/2 c. milk
    2 eggs
    1/4 c. canola oil
    1/2 c. white flour
    1/2 c. whole wheat flour
    1/4 c. oats
    1/4 c. cornmeal
    2 tsp. baking powder
    1/2 tsp. nutmeg
    1/2 tsp. ground ginger
    1 c. chopped walnuts
    1 c. dried cranberries

Directions

In bowl or mixer, beat pumpkin, sugar, milk, eggs and oil. Combine dry ingredients and add to pumpkin mixture. Fold in walnuts and cranberries. Pour into a greased 9x5x3-inch loaf pan or divide among muffin tins. Bake at 350° for one hour (20 minutes for muffins) until a toothpick inserted in center comes out clean. Makes one loaf, 12 slices.

    Absolutely delicious- I love the walnut taste. YUM! Be aware- its one cup of pumpkin, NOT one can. I made that mistake the first time & it was too moist. - 11/10/08

    Love the mixed grains, but found the recipe slightly sweeter than my taste. I used fresh cranberries rather than dried, and added an extra tablespoon of flour to deal with that--maybe next time add 2T more flour and decrease sugar by 2T. - 12/4/10
