Ingredients

    10 serving Ground Beef-Wegmans 95% lean, 5% fat ground beef (3 oz cooked)) (by JMEGILL01)
    2 tsp Bacon grease (for the vegetable stir fry)
    1 large Onions, sliced medium thick
    6 clove Garlic, minced
    4 tbsp Dynasty Oyster flavored Sauce
    2 stalk, large (11"-12" long) Celery, raw, cut on the bias
    3 tsp Ginger Root, minced
    450 grams Mushrooms, fresh (1 lb sliced)
    2 tbsp Fish Sauce
    4 tbsp Kikkoman Less Sodium Soy Sauce
    1.5 tbsp Argo 100% Pure Corn Starch to make a slurry

Directions

If using 95/5 ground beef, brown it and set aside.
if using 80/20 ground beef, brown it, place into a bowl or plate lined with paper towels, blot it with additional paper towels, then put into a colander and rinse with very hot water. This yields the equivalent of 95/5 beef. Set aside.

Add the bacon grease to the pan and heat on medium/high.

When it just begins to smoke, add all the vegetables and stir to the beginning of tender crisp.

Return the beef to heat it through, and add the fish sauce and soy sauce.

As it is heating, add the corn starch into a small amount of water to make a slurry and add about half, stir for a short bit and see if the sauce is clinging. If not, add the remainder of the slurry to thicken.
