Introduction

Ingredients

6 oz Baby Spinach (or more if the the other ingredients are too strong for you)
.25 fillet Salmon
2 tbsp Fat Free Raspberry Vinaigrette or Girards Balsamic Vinaigrette Fat Free
1/6 cup chopped Almonds (or other nut)
1/6 Cup crumbled Blue Cheese, crumbled not packed.
1/6 cup dried cranberries
Directions
Bake Salmon at 350 for about 15 minutes, pending on how big the fillet is. Or cook until the middle is flaky. When done, break the salmon into small pieces with a fork and put aside. Use only about 1/4 for the salad. I usually put the rest in a container in the fridge for future salads to save in time.
Set spinach in a bowl and sprinkle almonds over it. Sprinkle salmon over the salad and almonds. Then put the blue cheese over the salmon. Dress with 2 tbls of dressing.
