Introduction

Got this from Feasting at Home blog.. it has a LOT of great fresh food ideas. I have been wanting to try this for a while. Soup is a big favourite in my home because it is nutritious, satisfying and it represents 3 ready made meals for my husband and I. We both cook so this is means simple clean up and easy planning. Ingredients

    16 ounces Chicken Breast (cooked), no skin, roasted
    2 serving artichoke heart frozen (12 pieces) (by TRUNORTH)
    8 cup Kitchen Basic Unsalted Chicken Stock (by CSUCAM)
    2 cup, chopped Carrots, raw
    2 cup, diced Celery, cooked
    6 tbsp Parsley
    2 cup, chopped Onions, raw
    6 clove Garlic
    3 fl oz Lemon Juice
    3 tbsp Olive Oil
    .75 cup Wild Rice
    3.25 cup Artichoke Hearts, 3/4 cup (85g), Trader Joe's frozen (by TEHILA1)

Tips

Use cooked chicken to save time. I make my own chicken stock too by saving the bones and scrap ends of all my vegetable cuts and boiling with water for a few hours. Always different and very flavourful!

Wild Rice goes in raw
artichoke goes in last
spices include - herbes de provence, bay leaaves, cayenne, pepper, kosher salt
garnish with fresh chopped spinach and parsley
tablespoon olive oil, tablespoon romano optional
