Ingredients

    5 - 4oz chicken breasts, skin removed
    1.5 Cup Brown, long grain rice, uncooked
    1 Cup Frozen corn
    1 Can diced tomatoes, undrained
    1 Can black beans, drained and rinsed
    1 Cup onion, chopped
    1 Cup green pepper, chopped
    1 tbsp red or cayene pepper
    1 tbsp paprika
    1/2 Cup Tomato Juice (optional)

Directions

Heat oil in large saucepan. Cook onion and green pepper until vegetables are soft. Add tomatoes, rice, beans, corn, pepper and the tomatoe juice, if needed. Bring to boil. Move to oven safe dish, and place chicken breast on top of rice mixture. Sprinkle with paprika and pepper. Cook at 350 for about 45-55 mins.
