Introduction

Ingredients

    1 serving Italian Sausage, Mild - Trader Joe's (5 sausages/1 package)
    2 cup Bell peppers (Green, Red, Yellow, Orange)
    1 cup, sliced Onions, raw
    5 small Mushrooms, fresh
    1 serving Garlic, cooked (1 clove / serving)
    1 tbsp Kirkland Organic Extra Virgin Olive Oil
    1 fl. oz Sherry, dry
    1 tsp Oregano, ground
    1.5 tsp Celtic Sea Salt (by ALIVE-AND-WELL)
    .5 tsp Pepper, black

Directions

1. Over medium-low heat, add 1 tablespoon olive oil to a non-stick pan.
2. Preheat the pan for 1 minute.
3. Add the sausages and cover.
4. Cook, covered for 25 minutes - turning the sausages every 5-7 minutes.
5. Remove the sausages from the pan with tongs. Cover with foil and keep warm in a 150-degree oven. Retain the fat drippings in the pan.
6. Add the peppers and onions to the peppers to the pan.
7. Add the salt, pepper, and oregano.
8. Saute for roughly 5 minutes, stirring... until the peppers are slightly softened and the onion opaque.
9. Remove the pepper and onion mixture to the sausage dish... cover the sausages. Cover again and return to the oven to keep warm.
10. Add the mushrooms to the pan.
11. Saute for about 5 minutes then add the garlic. Saute for one more minute.
12. Turn the heat off and add the sherry.
13. Scrape up the caremelized bits in the pan with a non-stick safe spoon.
14. Pour the mushroom mixture over the sausages and peppers.
15. Plate 1 sausage per serving and top with the vegetables.
