Introduction

Ingredients

    1/2 Lg White Onion
    6 Lg Zucchini
    1 Tbsp Extra Virgin Olive Oil
    1 Lb Ground chicken
    1/2 C Carrot, chopped
    1/4 C Frank's Red Hot
    Salt & Pepper

Directions

Preheat oven to 375°. Line a baking tray with foil, place a wire cooling rack on top. Cut zucchini lengthwise and scrape out seeds, this will hold the filling. Brush with oil and sprinkle with S&P inside and out, place on tray and set aside.
Saute onion 5 minutes till just turning soft, add chopped carrots. Once soft add chicken and cook till no longer pink. Crumble the chicken as it cooks (I use a potato masher to do this job).
When cooked and crumbled, add S&P to taste, then add Frank's Sauce. Simmer till mostly absorbed.
To assemble, simply use two spoons and transfer the chicken into the zucchini boats. You can sprinkle with Bleu Cheese if you like (not calculated in macros), or drizzle with Bleu Cheese Dressing (also not calculated in macros, brands vary greatly).

Bake for around 15 minutes (I like my zucchini still slightly firm).

Serving Size: 1 stuffed zucchini, 2 halves
