Ingredients

    1.50 cup Bob's Red Mill Hazelnut Meal/Flour (by VLBARC)
    6 tbsp Cocoa, dry powder, unsweetened
    .50 cup, packed Brown Sugar
    4 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    2 large Egg, fresh, whole, raw
    2 tbsp Honey
    2 tsp Vanilla Extract
    .50 cup, chopped Pecans
    .75 tsp Baking Soda
    1 cup, shredded Coconut, raw

Directions

Preheat the oven to 350 degrees. Place the hazelnut flour, cocoa powder, brown sugar and baking soda in a large bowl and whisk to combine well. Ad the melted coconut oil, eggs, honey and vanilla and mix to combine well. Add pecans and coconut and mix to distribute evenly. Drop onto a parchment lined baking sheet in 2 tablespoon mounds. Push a half pecan into the center of each mound to flatten slightly. Back about 12 - 15 minutes until the cookies are puffed and slightly cracked on tip. Remove the cookies and allow them to cool. May be frozen.
