Introduction

This is my take on a healthy black bean salad. This is my take on a healthy black bean salad.

Ingredients

    5 Roma tomatoes, seeded and diced
    1 large cucumber, seeded and diced
    1 small red onion (or 1/4 of large), diced
    1 c of frozen corn, thawed and rinsed
    1 can of low sodium black beans, rinsed and drained (can soak dry black beans if you really want to keep the sodium down)
    1 large avocado, diced
    1 jalapeno chile, seeds removed and diced
    1 small bunch of cilantro chopped
    1 tsp. salt
    1/2 tsp. pepper
    3 Tbsp. canola oil or light tasting olive oil
    Juice of 3 limes

Directions

Mix all ingredients and let the flavors meld in refrigerator for a bit before eating,
