Ingredients

* Spinach, frozen, 1 package (10 oz)
* Red Ripe Tomatoes, 1 cup cherry tomatoes
* Mushrooms, fresh, 1 cup, pieces or slices
* Black Olives, canned (small-extra large), 1
* *Extra Light Olive Oil, 3 tbsp
* Lemon juice, 1 tbsp
* Garlic Juice 1 tsp
* Pepper, black, 1 tsp
* Butter, unsalted 1 tbsp
* Sea Salt, 1 dash
Directions
Cook the spinach until done. Squeeze out excess water. Put a little pat of butter or butter subtitute and mix. Throw in some cherry tomatoes, black olives and grilled mushrooms (grill in butter or olive oil). Pour the following dressing on it.
Mix the olive oil, lemon juice, garlic juice, pepper and sea salt together in a small bowl. I use a whisk to froth it up a bit. The longer it sits the better the garlic flavors the oil. Pour to taste and mix with the vegetables. I play around with the amount of lemon juice and garlic juice. Use more or less to your own tasting. This is also a great and healthy dressing for sandwiches and salads with lots of flavor! Enjoy!
